What You Will Need

  1. 2 ripe Bananas- gives these bars a super sweet taste
  2. 1/2 cup Nut butter- any nut butter will do
  3. 1/2 cup Carrot- I use the food processor to cut them up into tiny pieces
  4. 2 cups Oats- rolled oats
  5. 1/2 cup Chocolate chips- optional, but makes these so yummy!

How to Make These Easy Banana Snack Bars

1. Preheat the Oven:
Set your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper to prevent sticking.

2. Prepare the Carrots:
Shred or finely chop ½ cup of carrots. Using a food processor can make this step quicker and ensure the pieces are small enough to blend well into the bars.

3. Mash the Bananas:
In a large mixing bowl, mash 2 ripe bananas until smooth. The riper the bananas, the sweeter your bars will be.

4. Combine Wet Ingredients:
Add ½ cup of your chosen nut butter (such as almond or peanut butter) to the mashed bananas. Mix until well combined.

5. Add Dry Ingredients:
Stir in the prepared carrots, 2 cups of oats, and ½ cup of chocolate chips (if using). Mix until all ingredients are evenly distributed.

6. Transfer to Baking Dish:
Pour the mixture into the prepared baking dish. Use a spatula to spread it evenly and press down gently to ensure the bars hold together well.

7. Bake the Bars:
Place the dish in the preheated oven and bake for 18 minutes, or until the edges are golden brown and the center is set.

8. Cool and Slice:
Allow the bars to cool completely in the baking dish. Once cooled, cut them into squares or bars of your desired size.

Storing Leftover Carrot Bars

Store your banana carrot oatmeal bars in an airtight container at room temperature for up to 2 days, in the refrigerator for up to 5 days, or freeze them for up to 2 months. To thaw, simply leave them at room temperature or warm them slightly in the microwave.​

Banana Carrot Bars

These soft, naturally sweet bars are made with mashed banana, shredded carrots, oats, and nut butter—perfect for toddlers and easy to prep ahead. Great as a snack, breakfast, or lunchbox treat, and they freeze well too.

Ingredients 

  • 2 bananas
  • 1/2 cup nut butter
  • 1/2 cup shredded or chopped carrot
  • 2 cups oats
  • 1/2 cup chocolate chips

Instructions
