Banana Carrot Bars

These soft, naturally sweet bars are made with mashed banana, shredded carrots, oats, and nut butter—perfect for toddlers and easy to prep ahead. Great as a snack, breakfast, or lunchbox treat, and they freeze well too.

Ingredients

  • 2 bananas
  • 1/2 cup nut butter
  • 1/2 cup shredded or chopped carrot
  • 2 cups oats
  • 1/2 cup chocolate chips

Instructions

  • Preheat oven to 350 degrees F.
  • Shred or chop the carrot into small pieces.
  • Mix all ingredients in a bowl.
  • Line an 8x8 baking dish with parchment paper.
  • Press mixture into dish.
  • Cook for 18 minutes.
  • Cut into bars and enjoy!

Notes

Make sure to use very ripe bananas for the best natural sweetness.
If you finely grate the carrots they'll blend into the bars easily.
For a nut-free version, use sunflower seed butter.
These bars can be frozen—just thaw a few seconds in the microwave before serving.
