Protein Egg Bites

If you’re looking for a quick, protein-rich snack or breakfast option for your toddler, Protein Egg Bites are the perfect solution! Packed with eggs, cottage cheese, and cheddar, these bites are easy to make, customizable with your toddler’s favorite veggies or meats, and ideal for little hands. Ingredients:

  • 8 eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded cheddar cheese
  • Optional: salt or garlic powder
  • Optional toppings: chopped veggies, sausage, bacon, spinach, etc.

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin with nonstick spray or butter.
  2. Blend the Base: In a blender, combine the eggs, cottage cheese, and shredded cheddar cheese. Blend until smooth and creamy. You can also add a pinch of salt or garlic powder for extra flavor if desired.
  3. Pour into Muffin Pan: Pour the egg mixture into the greased muffin tin, filling each cup about 3/4 full.
  4. Add Toppings: This is where the fun comes in! Add any toppings you like—chopped veggies like bell peppers or spinach, cooked sausage or bacon, or even a little extra cheese. Make sure to press them down gently so they settle into the egg mixture.
  5. Bake: Place the muffin tin in the oven and bake for about 15 minutes, or until the egg bites are set in the middle and slightly golden around the edges.
  6. Cool and Serve: Allow the egg bites to cool slightly before serving. They should pop right out of the muffin tin with ease!
