Protein Egg Bites

These soft and fluffy Protein Egg Bites are packed with nutritious ingredients like eggs, cottage cheese, and cheddar. Baked in a muffin tin, they’re just the right size for toddler hands and perfect for breakfast on the go. They reheat beautifully, making them a meal prep favorite for busy mornings.

Ingredients

  • 8 eggs
  • 1 cup cottage cheese
  • 1/2 cup cheddar cheese shredded
  • optional pinch of salt or garlic powder
  • optional toppings like tomato, mushrooms, spinach, ham, bacon, sausage, green peppers, etc

Instructions

  • Preheat your oven to 350°F (175°C) and grease a muffin tin with nonstick spray or butter.
  • In a blender, combine the eggs, cottage cheese, and shredded cheddar cheese. Blend until smooth and creamy. You can also add a pinch of salt or garlic powder for extra flavor if desired.
  • Pour the egg mixture into the greased muffin tin, filling each cup about 3/4 full.
  • Add any toppings you like—chopped veggies like bell peppers or spinach, cooked sausage or bacon, or even a little extra cheese. Make sure to press them down gently so they settle into the egg mixture.
  • Place the muffin tin in the oven and bake for about 15 minutes, or until the egg bites are set in the middle and slightly golden around the edges.
  • Allow the egg bites to cool slightly before serving. They should pop right out of the muffin tin with ease!

Notes

Preventing Sticking: To avoid the egg bites sticking to the pan, use silicone muffin molds or grease the muffin tin.
