This is a go to breakfast that I make for my kids! When I feel like making something yummy, but want to change it up from what we normally eat, I make this every time! It is definitely something that you can add into your rotation to change up breakfast a little bit at your house. It literally takes 5 minutes, with only 5 ingredients. My kids love it and I hope yours will too!

I love making this french toast because it is SUPER EASY, and also healthier than normal french toast! So if I can’t think of anything to make for my kids, this is what I make!

What You Will Need

  1. 2 slices of bread- Make sure you toast it first!
  2. Maple syrup
  3. Vanilla
  4. Milk- dairy or non dairy will work
  5. Egg

Substitutions

  1. 2 slices of bread- Use gluten free bread if needed
  2. Milk- any non dairy milk will work
  3. Egg- use a flax egg instead

Storage

If you want to make extra, you can store this in the fridge for about 3 days, and the freezer for 3 months! When you are ready to reheat, cook in the microwave for 15 second increments. Make sure it is completely cooled before serving it to your child.

Notes

Make sure that the bread fully soaks up the egg mixture. If there is leftover egg mixture at the bottom, it will just turn into cooked egg. Add more bread if there is extra mixture! I love to sprinkle a bit of cinnamon over the top before I cook it, so feel free to change things up however you feel it would be yummy!

1 Bowl Microwave French Toast

Prep: 3 minutes
Cook: 2 minutes
Servings: 1

Ingredients

  • 1 egg
  • 1 tbsp maple syrup
  • 1/4 tsp vanilla
  • 2 tbsp milk
  • 2 pieces of bread

Instructions

  • Mix the egg, maple syrup, vanilla, and milk together in a microwavable bowl.
  • Cut bread into 1/2 inch pieces. If you are using sandwich bread, toast it first so it doesn't get soggy.
  • Add bread to the bowl and toss to coat completely. If there is leftover egg mixture, add more bread so that the mixture fully seeps into the bread.
  • Microwave for 90 seconds. Halfway through, give it a little stir to make sure the bread has absorbed the egg mixture.
  • Enjoy with fruit on top!

I love this as a week day or weekend breakfast for me or the kids! We use whatever fruit we have on hand or sometimes sprinkles as a topping. My 4 year old loves helping with this recipe; it’s so easy and quick he can almost do it himself!
