Why French Toast Cups are Great for Toddlers

  1. Kid-Friendly Portion Sizes: French Toast Cups come in individual servings, making them perfect for little hands and appetites.
  2. Nutrient-Packed: This recipe includes eggs, which are a fantastic source of protein, essential vitamins, and minerals. The addition of milk provides calcium for strong bones, and the maple syrup offers a touch of natural sweetness without the need for added sugars.
  3. Customizable: Toddlers can be picky eaters, but with French Toast Cups, you can get creative. Add their favorite fruits like blueberries, or even a sprinkle of cinnamon for a delightful twist. You can tailor this recipe to suit your child’s preferences.
  4. Easy to Eat: No forks or knives needed here! The cup format is perfect for little fingers, and it minimizes messes. Less time spent cleaning up means more quality time with your toddler.
  5. Great for Busy Mornings: French Toast Cups are quick to prepare and can even be made ahead of time. Pop them in the oven while you get your toddler ready, and you’ll have a hot and wholesome breakfast waiting for you.

Ingredients

  • 3 eggs
  • 3 tablespoons of maple syrup
  • 1 1/2 teaspoons of vanilla extract
  • 1/3 cup of milk
  • 4-5 slices of bread
  • 1/3 cup of blueberries (for added sweetness)
  • Sprinkle of cinnamon (optional, for a flavorful twist)

How to Make These Easy Mini French Toast Cups

  1. Preheat your oven to 350°F (175°C).
  2. Start by cutting the bread into small squares.
  3. Grease a muffin tin with cooking spray and place the bread squares into each muffin cup.
  4. In a bowl, whisk together the eggs, maple syrup, vanilla extract, and milk until well combined.
  5. Carefully pour the egg mixture over the bread squares, ensuring they are all soaked evenly.
  6. Add a few blueberries to each cup for that extra burst of flavor and nutrition. If your toddler enjoys cinnamon, a sprinkle on top is a great idea.

Substitutions

Bread: Use whatever you have—soft sandwich bread, whole wheat, brioche, or even slightly stale bread all work. Brioche adds a nice richness if you’re feeling fancy.

Milk: Any milk goes here—use what your family drinks.

Maple Syrup: You can swap in honey, agave, or even a little brown sugar if that’s what you’ve got.

Eggs: If you have an egg allergy, a flax egg (1 tbsp ground flax + 3 tbsp water) works, though the texture will be a bit softer.

Blueberries: You can swap out the blueberries for any other berry or fruit!

Storing Leftover French Toast Muffins

If you have leftovers, they can be stored in an airtight container in the refrigerator for up to 2-3 days. To reheat, pop them in the oven or microwave for a quick and convenient breakfast.

You can also freeze them for up to 3 months. Reheat in the microwave or oven.

Common Questions

Can I make these baked french toast cups gluten-free?

  • Yep! Just use your favorite gluten-free sandwich bread. Try to pick one that’s a bit sturdier so it holds up to the egg mixture—some of the super soft ones can get mushy.

Can I make them dairy-free?

  • Definitely. Just swap the milk for any dairy-free option like oat, almond, or soy milk. If you usually use a sweetened or vanilla version, that can actually add a nice flavor!

What can I serve these blueberry french toast cups with?

  • These are great on their own, but we usually serve them with some fresh fruit, a dollop of yogurt, or even a scrambled egg if I’m trying to add more protein. If it’s a weekend or a slower morning, a little drizzle of maple syrup or nut butter makes them taste extra special.

Delicious! My toddler loved help make them and loved eating them (so did my husband)

My baby really likes them (for someone who dislikes eggs)! I skipped the vanilla. I also used a silicone tray to bake these, and had an extra tray in the oven filled with water to let the french toast bites steam and get soft enough for my infant.
