Course: Breakfast
Cuisine: American
Keyword: French toast
Servings: 12 french toast cups
- 3 eggs
- 3 tbsp maple syrup
- 1.5 tsp vanilla
- 1/3 cup milk
- 4 pieces bread
- 1/3 cup blueberries
- cinnamon optional
Preheat your oven to 350°F (175°C).
Cut the bread into small squares. Grease a muffin tin with cooking spray and place the bread squares into each muffin cup.
In a bowl, whisk together the eggs, maple syrup, vanilla extract, and milk until well combined. Carefully pour the egg mixture over the bread squares, ensuring they are all soaked evenly.
Add a few blueberries to each cup for that extra burst of flavor and nutrition. Sprinkle cinnamon on top if desired.
Bake in the preheated oven for 16-18 minutes or until the French Toast Cups are golden brown and set.
Bread Tip: Slightly stale bread or toasting it first helps it hold up better when soaking in the egg mixture.
Flavor Boost: A pinch of cinnamon or vanilla goes a long way for that cozy French toast flavor.
Make It a Meal: Pair with a side of yogurt, some fruit, or an egg for a more filling breakfast.
Freezer Friendly: Let them cool completely, then freeze them for up to 3 months. Microwave for 30–60 seconds to reheat, or warm in the oven.
