French Toast Cups

These easy French Toast Cups are baked in a muffin tin for the perfect toddler-sized breakfast! Made with simple ingredients and customizable with fruit or cinnamon, they’re great for busy mornings, meal prep, or freezing for later.

Ingredients

  • 3 eggs
  • 3 tbsp maple syrup
  • 1.5 tsp vanilla
  • 1/3 cup milk
  • 4 pieces bread
  • 1/3 cup blueberries
  • cinnamon optional

Instructions

  • Preheat your oven to 350°F (175°C).
  • Cut the bread into small squares. Grease a muffin tin with cooking spray and place the bread squares into each muffin cup.
  • In a bowl, whisk together the eggs, maple syrup, vanilla extract, and milk until well combined. Carefully pour the egg mixture over the bread squares, ensuring they are all soaked evenly.
  • Add a few blueberries to each cup for that extra burst of flavor and nutrition. Sprinkle cinnamon on top if desired.
  • Bake in the preheated oven for 16-18 minutes or until the French Toast Cups are golden brown and set.
