Substitutions

Cheddar Cheese: Swap with mozzarella, monterey jack, cream cheese, or a dairy-free option if needed.

Broccoli: Use finely chopped spinach, zucchini (squeezed dry), or cauliflower florets.

Egg: Replace with a flax egg (1 tbsp ground flaxseed + 3 tbsp water).

Garlic Powder: Substitute with onion powder, Italian seasoning, or take it out for a milder taste.

Storing Extra Veggie Cheese Waffles

These healthy toddler waffles can be stored in an airtight container in the refrigerator for up to three days, and in the freezer for up to 2 months. To reheat, simply pop them in the toaster or toaster oven until warmed through. They’re perfect for a quick and easy breakfast, lunch, or snack option for busy weekdays.

Common Questions

Can I make these broccoli waffles gluten-free?

  • Yes! The original recipe doesn’t include flour, making it naturally gluten-free. Ensure all ingredients, especially cheese and seasonings, are certified gluten-free.

Can I use fresh or frozen broccoli?

  • Fresh chopped broccoli works the best, but if you’re using frozen broccoli make sure to chop it small enough so it can cook fully.

How do I avoid them sticking to the waffle iron?

  • You may need to cook them longer! That happens to mine if I take them off too soon. Also make sure to spray the waffle iron with a little oil or butter before you pour the batter for smoother removal.

Notes

Waffle Iron: Using a mini waffle iron works best for toddler-sized portions, but a standard one is also suitable.
Serving Suggestions: Pair with a dollop of sour cream, yogurt, or a mild dipping sauce.
Meal Prep: These waffles are great for batch cooking. Store in the fridge for up to 3 days or freeze for longer storage.
Texture Tip: For extra crispiness, let the waffles sit in the waffle iron for an additional minute after the indicator signals they’re done. If you’re using frozen broccoli this also helps it to cook fully.

I tried this recipe in a desperate attempt to get my four year old to eat broccoli. She is going through what I hope is a stage and is very picky when it comes to vegetables. While to my great dissapointment, she refused to eat these, I enjoyed them very much. Easy to make, cooked fast, and were yummy. More for me I guess.

Not sure what went wrong but my waffles fell apart. Followed recipe and spray waffle maker with oil and failed. Any useful tips?
