Servings: 2 waffles

Ingredients

  • 1/2 cup cheddar cheese shredded
  • 1/4 cup broccoli chopped
  • 1 egg
  • 1/4 tsp garlic powder

Instructions

  • In a mixing bowl, combine the shredded cheddar cheese, chopped fresh broccoli, egg, and garlic powder. Stir until everything is well combined.
  • Preheat your mini waffle iron according to the manufacturer's instructions. Once the waffle iron is hot, lightly grease it with cooking spray or oil to prevent sticking.
  • Spoon the broccoli cheese waffle batter onto the preheated waffle iron, spreading it out evenly. Close the lid of the waffle iron and cook for 3-4 minutes, or until the waffles are golden brown and crispy.
  • Cool and enjoy!

Notes

Waffle Iron: Using a mini waffle iron works best for toddler-sized portions, but a standard one is also suitable.
Serving Suggestions: Pair with a dollop of sour cream, yogurt, or a mild dipping sauce.
Meal Prep: These waffles are great for batch cooking. Store in the fridge for up to 3 days or freeze for longer storage.
Texture Tip: For extra crispiness, let the waffles sit in the waffle iron for an additional minute after the indicator signals they're done. If you're using frozen broccoli this also helps it to cook fully.
