Ingredients

  • 2 cups rolled oats
  • 1/4 cup peanut butter (or any nut/seed butter)
  • 2 ripe bananas, mashed
  • 1/3 cup chocolate chips (or blueberries, raisins, etc.)
  • 2 tablespoons maple syrup

Instructions

  1. Preheat your oven to 375°F (190°C) and grease or line a mini or regular muffin tin.
  2. In a large bowl, mash the bananas with a fork until smooth.
  3. Add the peanut butter, oats, maple syrup, and chocolate chips. Mix everything together until well combined.
  4. Spoon the mixture into the prepared muffin tins, filling each cup about 3/4 full. Pack the mixture down.
  5. Bake for 15 minutes, or until the muffins are firm and golden around the edges.
  6. Let them cool before removing from the tin.

Storage Instructions

  • Fridge: Store in an airtight container in the refrigerator for up to 5 days.
  • Freezer: Freeze for up to 2 months. Reheat in the microwave for 20–30 seconds or pop in the toaster oven.
