Banana Avocado Pancakes

These pancakes are so easy to make and are filled with healthy fats which are great for toddlers! If your little on doesn’t like avocado, it’s a good way to show them that they can be yummy! You really can’t taste them in this recipe.

Ingredients:

  • 1 banana
  • 1 egg
  • 1/2 avocado
  • 3/4 cup milk
  • 1 cup self-rising flour (or 1 cup all-purpose flour and 1 1/2 tsp baking powder)
  • Blueberries (for topping)

Instructions:

  1. Prepare the Ingredients: Peel and mash the banana in a mixing bowl. Add the egg and continue mashing until well combined. Mash the avocado separately and add it to the banana and egg mixture. Add the milk.
  2. Create the Batter: In the same bowl, add the self-rising flour (or all-purpose flour and baking powder if using), and mix until a smooth batter forms. Ensure that there are no lumps for a uniform texture. Add the blueberries if using.
  3. Heat the Griddle or Pan: Preheat a griddle or non-stick pan over medium heat. If needed, lightly grease the surface with cooking spray or a small amount of oil.
  4. Cook the Pancakes: Pour a small amount of batter onto the griddle to form pancakes of your desired size. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.

Banana Avocado Pancakes

Ingredients 

  • 1 banana , mashed
  • 1 egg
  • 1/2 avocado, mashed
  • 3/4 cup milk
  • 1 cup self rising flour, or 1 cup all purpose flour+1.5 tsp baking powder
  • Optional blueberries

Instructions 

  • Mash the banana and avocado. Add all ingredients together in a bowl and mix until smooth.
  • Grease a pan. On medium low heat, scoop some pancake mix and cook the pancakes for a few minutes and then flip and cook the other side.
  • Cool and enjoy!

Notes

Store in a ziplock bag on the counter for 2-3 days, in the fridge for m 4-5 days, or freezer for 3 months.

  1. I loved the pancakes and my baby liked them ok (we are working on transitioning from purées). Are the pancakes supposed to be gooey and sticky after being cooked? I assume it’s from the ingredients, mostly the banana? Thanks for the great recipe!

  2. Very good. I substituted 1 c of Krusteaz Belgian Waffle mix for the flour and baking soda. I’ll make them again – a much healthier alternative to regular pancakes – and I cooked them in a pan with a light coating of coconut oil. 👍👍
