Baked Pancake Bites (freezer friendly!)

When I first made these baked pancake bites for my 2 kids, I made 2 pans of them because I knew they would be a hit. I was hoping to save half for my freezer, and to my surprise they ate BOTH pans of them! I wasn’t able to save any for the freezer. With how picky my kids are-I am just delighted that they loved them so much!
Next time, I am definitely going to have to make more and save them in the freezer because these are VERY freezer-friendly. Your future self will be thanking you when you pull these out for the quickest breakfast ever. Read below to find out how to make this super easy toddler breakfast!

Ingredients
- 2 mashed bananas (naturally sweet and nutritious)
- 2 cups milk (for creamy goodness)
- 2 cups flour
- 2 teaspoons baking powder
Toppings:
- Chocolate chips (my FAVORITE topping!!)
- Raspberries (for a burst of tanginess)
- Blueberries (tiny bursts of sweetness)
How To Make These Freezer-Friendly Pancake Bites
1. Mix: In a mixing bowl, combine the mashed bananas, milk, and flour. Stir until the ingredients are smooth and combined together!
2. Pour: Preheat your to 350 degrees F. As it warms up, pour the batter into a mini muffin tin, filling each compartment about two-thirds full.
3. Toppings: Now comes the fun part – choosing the toppings! Whether your little one adores chocolate chips, the tang of raspberries, or the sweetness of blueberries, press them gently into the batter-filled compartments.
4. Bake to Perfection: Slide the muffin tin into the preheated oven and bake for 15 minutes!
5. Serve: Let the pancake bites cool slightly before serving them to your little one. Let your little one dip them in syrup, peanut butter, or whatever else you want! They are also amazing plain, with no dip.

Change Up Toppings

Freezing Extra Pancake Bites
This recipe makes enough to freeze and use for later! It makes 2 pans, so let your kids eat as many as you want and then save the rest for later! Your future self is going to thank you for this. After cooling, place these pancake bites in a freezer safe container and freeze for up to 3 months. If you don’t want to freeze, you can also keep them in the fridge for up to 5 days!
A Note on These Baked Pancake Bites
I highly recommend making these in a mini muffin tin, not a regular size! Just remember, these are pancake bites, not muffins, so they won’t have the exact same super fluffy texture that muffins have. They don’t rise as much, but are perfect for dipping. They are also good by themselves! As they have no sugar and are just sweetened with banana, the mix-ins are essential in making these taste amazing. Hi, I just made these and my 18 month old and I loved them! Just wondering how I would heat and serve after freezing them? Do I have to thaw out? If so how long or is there a faster way?
Is the batter supposed to be thin? Mine turned out thick and they were gummy after I cooked them.

So excited to make these today! I see you didn’t add baking powder. The pancakes still rose without?! I have aluminum free baking powder I was considering adding but I could do without, that’s great!
You don’t need baking powder! You can add if you want, but these bites still turn out without the baking powder. They aren’t a muffin, so they won’t rise as much, but they are great little bites for dipping.
Just made them for the first time. Want to confirm that they have a Dowie texture when done? Versus say, fluffy?
I have updated the recipe to help fix that. They aren’t muffins so they won’t be quite as fluffy, but are yummy little bites perfect for dipping!
