Why Baked Brownie Oatmeal?

As a mom, I understand the constant struggle of finding meals that are both delicious and nutritious for our little munchkins. That’s why this recipe ticks all the boxes! Here’s why Baked Brownie Oatmeal is a winner for toddlers and families alike:

  1. Nutrient-Rich Ingredients: Packed with the goodness of oats, bananas, cocoa, eggs, and milk, this recipe is a powerhouse of essential nutrients, including fiber, protein, vitamins, and minerals, crucial for your toddler’s growth and development.
  2. Versatility: You can customize this recipe to suit your family’s preferences. Add a handful of chocolate chips for an extra touch of sweetness or throw in some chopped nuts for added crunch and nutrition.
  3. Convenience: With just a few simple ingredients and minimal prep time, this recipe is a lifesaver for busy moms. Plus, you can easily make a batch ahead of time and store it in the fridge for a quick and fuss-free breakfast or snack option.
  4. Kid-Approved Flavor: Let’s be honest – what toddler can resist the allure of chocolate? The rich cocoa flavor combined with the natural sweetness of bananas makes this dish an instant hit with even the pickiest eaters.

How to Make Baked Brownie Oatmeal

Now, let’s dive into the easy-peasy steps to whip up this scrumptious treat:

Ingredients:

  • 2 mashed bananas
  • 2 cups oats
  • 1/3 cup cocoa powder
  • 2 eggs
  • 1 cup milk
  • Chocolate chips (optional, but highly recommended. If you don’t use them, I would add 3 tablespoons of maple syrup or honey to add that extra sweetness.)

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. In a mixing bowl, combine the mashed bananas, oats, cocoa powder, eggs, and milk. Stir until the mixture is smooth and well-combined.
  3. Fold in a handful of chocolate chips for an extra chocolatey kick! If you don’t add the chocolate chips, I would add a few tablespoon of maple syrup to make sure it’s sweet enough.
  4. Pour the mixture into the prepared baking pan, spreading it out evenly.
  5. Pop it into the preheated oven and bake for about 25 minutes, or until the top is set and slightly firm to the touch.
  6. Once baked, remove from the oven and let it cool for a few minutes before slicing into squares.
  7. Serve warm and watch as your little ones gobble up this deliciously decadent treat!

Storage

  • Baked Brownie Oatmeal can be stored in an airtight container in the refrigerator for up to 3-4 days. Simply allow it to cool completely before transferring to the container.
  • For longer storage, you can freeze individual portions in freezer-safe bags or containers. Just thaw overnight in the refrigerator or reheat in the microwave when ready to enjoy.
