Hulk Roll Ups

This is a meal that could be perfect for breakfast, lunch, or dinner! It is a super full green color so I like to call them Hulk Roll Ups, or you could also call them Grinch roll ups, Monster roll ups, etc.

These wraps are made from eggs and spinach, and filled with a yummy cheese! This is a great way to get protein and veggies into your toddler. These are so so easy to make, and my three year old loves them! I hope your little one loves them as much as we do!

Why Hulk Roll Ups Are Great for Toddlers:

Ingredients:

  • 2 eggs
  • 1 cup fresh spinach
  • Mozzarella cheese (could also use any cheese of your choice)

Instructions:

  1. Prepare the Spinach: Wash the fresh spinach thoroughly and pat it dry with paper towels.
  2. Blend the Ingredients: In a blender, combine the eggs and spinach. Blend until you have a smooth, green mixture.

3. Cook the Hulk Wrap: Heat a medium-sized, greased pan on the stove over medium heat. Pour the spinach and egg mixture into the pan, spreading it out until it’s pretty thin and covers most of the pan.

4. Cook and Flip: Let the mixture cook on one side until it’s set. Then, carefully flip it over to cook the other side.

5. Add Mozzarella Cheese: Once the flip side is cooked, sprinkle mozzarella cheese over the cooked surface.

6. Cover and Melt: Cover the pan with a lid and allow the cheese to melt and the wrap to cook through. This should take just a few minutes.

7. Roll It Up: Once the wrap has cooled slightly, roll it up tightly, starting from one side.

8. Slice and Serve: Using a sharp knife, cut the rolled-up wrap into 1/2-inch pieces, creating bite-sized Hulk Roll Ups.

Here’s how to store any leftover Hulk Roll Ups:

  • Refrigeration: Place the roll ups in an airtight container and store them in the refrigerator for up to 2-3 days.

Hulk Roll Ups

Ingredients 

  • 2 eggs
  • 1 cup fresh spinach
  • mozzarella cheese

Instructions 

  • Wash your fresh spinach and dry.
  • Add spinach and eggs to a blender and blend until completely smooth.
  • Grease a medium sized pan over medium heat. Pour the spinach egg mixture in the pan and let it spread until it is pretty thin and covers almost the whole medium sized pan.
  • Let cook on one side until set. Flip it over.
  • Add the mozzarella cheese, however much you want. Cover the pan with a lid so that the mozzarella can melt.
  • Once the mozzarella has melted and both sides are cooked through, remove it from the pan and let cool.
  • Once it has cooled, starting on one side, roll it up tightly. Then cut the roll up into 1/2 inch pieces. Let cool and serve!

    Couldn’t believe my toddler devoured this! Turned out great and I subbed Gouda for Mozzarella worked fine!
