Add spinach and eggs to a blender and blend until completely smooth.
Grease a medium sized pan over medium heat. Pour the spinach egg mixture in the pan and let it spread until it is pretty thin and covers almost the whole medium sized pan.
Let cook on one side until set. Flip it over.
Add the mozzarella cheese, however much you want. Cover the pan with a lid so that the mozzarella can melt.
Once the mozzarella has melted and both sides are cooked through, remove it from the pan and let cool.
Once it has cooled, starting on one side, roll it up tightly. Then cut the roll up into 1/2 inch pieces. Let cool and serve!
