Fresh Caprese Pasta

This is one of my favorite dinners to make for my whole family because it is no cook (besides the pasta), and is sooo easy to make! If your toddler doesn’t like tomatoes, no worries! Even if you just give them the pasta it has such a delicious flavor from soaking in tomatoes, basil, etc. I hope you give this a try and love it!

Introducing your little ones to new flavors and textures is an exciting journey, and what better way to do so than with a delicious and nutritious meal like Fresh Caprese Pasta? This recipe is not only easy to prepare but also bursting with fresh ingredients that toddlers and the whole family will love.

Ingredients:

  • 1 lb angel hair pasta
  • 1/2 cup olive oil
  • 5 tsp minced garlic
  • 24 ounces cherry tomatoes, halved or quartered
  • 16 oz fresh mozzarella pearls
  • 1/4 cup chopped basil

Instructions:

  1. Cook the angel hair pasta according to the package instructions until al dente. Once cooked, drain the pasta and set it aside to cool slightly.
  2. While the pasta is cooling, prepare the rest of the ingredients. In a large mixing bowl, combine the olive oil and minced garlic.
  3. Add the halved cherry tomatoes, fresh mozzarella pearls, and chopped basil to the bowl with the garlic and olive oil mixture. Gently toss everything together until well combined.
  4. Add the cooked pasta to the bowl with the tomato and mozzarella mixture. Toss everything together until the pasta is evenly coated in the olive oil and garlic dressing and the ingredients are well distributed.
  5. Serve the Fresh Caprese Pasta immediately, garnished with additional fresh basil leaves if desired.
