Creamy Tomato Soup

This is my go to soup to make for my kids! It’s so easy, packed with tomato and protein from the greek yogurt! It’s so yummy, and definitely one of my favorite soups!

What You Will Need

  1. Onion
  2. Garlic
  3. Olive oil
  4. Diced tomato
  5. Low Sodium Vegetable Broth
  6. Dried basil
  7. Greek yogurt

Creamy Tomato Soup

Prep: 3 minutes
Cook: 10 minutes
Servings: 6

Ingredients 

  • 1 tbsp olive oil
  • 1/2 chopped onion
  • 2 tsp minced garlic
  • 28 ounce can diced tomato
  • 1 cup low sodium vegetable broth
  • 1/2 tsp dried basil
  • 1/2 cup plain greek yogurt

Instructions 

  • In a medium pot heat olive oil over medium heat. Add garlic and onion and saute until soft.
  • Add tomatoes, broth, basil, and yogurt. Bring to a boil, then lower heat and simmer for 10-15 minutes.
  • Remove soup from heat, and pour into a blender. Blend until completely smooth!
  • Enjoy!
