This Creamy Tomato Soup is my go-to recipe for a quick, comforting meal that my kids adore. It’s rich in tomato flavor, creamy from the Greek yogurt, and comes together in just about 15 minutes. Plus, it’s packed with protein and perfect for dipping grilled cheese or enjoying on its own.

What You Will Need
- 1 tbsp olive oil
- ½ chopped onion
- 2 tsp minced garlic
- 28 oz can diced tomatoes
- 1 cup low-sodium vegetable broth
- ½ tsp dried basil
- ½ cup plain Greek yogurt
Instructions
Sauté Oil, Onion, and Garlic
In a medium pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until softened and fragrant.
Add Core Ingredients
Stir in the diced tomatoes (with their juice), vegetable broth, and dried basil. Bring the mixture to a gentle boil.
Simmer
Reduce heat and let the soup simmer for 10-15 minutes to allow flavors to meld.
Blend
Remove the pot from heat. Carefully transfer the soup to a blender and blend until completely smooth. Alternatively, use an immersion blender directly in the pot.
Incorporate Yogurt
Return the blended soup to the pot. Stir in the Greek yogurt until fully combined and heated through.
Serve
Ladle into bowls and enjoy warm.
Storage instructions
Refrigerator: Store leftovers in an airtight container for up to 4 days.
Freezer: Freeze in individual portions for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheating: Warm on the stovetop over medium heat, stirring occasionally, until heated through

Instructions
- In a medium pot heat olive oil over medium heat. Add garlic and onion and saute until soft.
- Add tomatoes, broth, basil, and yogurt. Bring to a boil, then lower heat and simmer for 10-15 minutes.
- Remove soup from heat, and pour into a blender. Blend until completely smooth!
- Enjoy!
