As a mom, finding recipes that are both delicious and easy to prepare can sometimes feel like a never-ending quest. But fear not, because I’ve got a recipe that checks all the boxes: Chicken Parmesan Pasta Bake! This hearty dish is not only a hit with toddlers but also perfect for the whole family. With just a few simple ingredients and minimal prep time, it’s a lifesaver for busy weeknights or lazy weekends.

Ingredients:

  • 1 lb pasta (any shape works great)
  • 24 oz jar of marinara sauce
  • 1 empty marinara sauce jar filled with water
  • 1 lb chicken breast, cut into bite-sized pieces
  • Salt, pepper, and garlic powder to taste
  • Grated mozzarella and Parmesan cheese for topping

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. In a 9×13 inch baking dish, combine the uncooked pasta, marinara sauce, water (use the empty marinara sauce jar to measure), chicken pieces (just cut them straight into the dish with scissors), and seasonings. Mix well to ensure everything is evenly distributed.
  3. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  4. After 30 minutes, remove the foil and sprinkle the grated mozzarella and Parmesan cheese over the top of the pasta.
  5. Cover the dish again with foil and return it to the oven for an additional 15 minutes.
  6. Once done, remove from the oven and let it cool for a few minutes before serving.

Why It’s Great for Toddlers and Families:

  1. Nutritious: This recipe packs in protein from the chicken, essential carbohydrates from the pasta, and vitamins from the marinara sauce, making it a well-balanced meal for growing toddlers.
  2. Easy to Eat: The bite-sized chicken pieces and pasta make it easy for little hands to grab and enjoy without much fuss.
  3. Hidden Veggies: Sneak in some extra nutrition by adding finely chopped vegetables like bell peppers, carrots, or spinach to the marinara sauce.
  4. Versatile: Feel free to customize this recipe with your family’s favorite ingredients. You can add in some diced tomatoes, mushrooms, or even cooked broccoli to amp up the flavor and nutritional content.

Storage Instructions:

  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Simply reheat in the microwave or oven until warmed through.
  • This dish also freezes well! Transfer cooled leftovers to a freezer-safe container or ziplock bag, and store in the freezer for up to 3 months. To reheat, thaw overnight in the refrigerator and then reheat in the microwave or oven.
