Zucchini Parmesan Tots

Does your kid like tater tots? Try making these zucchini tots, hopefully they will be a hit! They are super delicious, and give a healthy dose of zucchini!
My toddler is obsessed with tater tots. He wants them for breakfast, lunch, and dinner. I wanted to make a healthier version, and knew zucchini would be a perfect way to make that happen! With just 5 ingredients you can make these delicious, healthier version of tater tots! I love to add these as a side with chicken nuggets (another one of my toddlers favorites)
What You Will Need
- Medium sized zucchini- you can either peel the skin off, or leave it on (I peeled it to make the tots less of a green color.)
- Panko bread crumbs
- Parmesan cheese-the cheese binds the tots together and gives delicious flavor.
- 1 egg-to bind the tots
- Garlic powder-I love how this makes the tots taste
Substitutions
- Egg-use a store bought egg replacer, or 1 flax egg.
Process
- Preheat oven to 400 F.
- Grate the zucchini. I used a food processor to do this. You can either leave the skin on, or peel it before.
- Use a paper towel to squeeze the liquid out of the zucchini. Do this several times.
- To a large bowl, add all the ingredients. Stir together.
- Form the mixture into tots.
- Put the tots on a parchment lined baking sheet. Cook for 15-20 minutes or until the tots start to brown.
Storage
You can keep in an airtight container in the fridge for 3 days. You can also freeze for up to 2 months!

Notes
-I like the grate the zucchini first, because it has less of a green color that way. You definitely don’t have to grate, you can leave the skin on!
-Make sure to squeeze the liquid out of the zucchini. You will probably need to squeeze it out with a paper towel 3-4 times.
-Serve with any dipping sauce you choose!

Parmesan is best, but I think mozzarella would work too!
