Zucchini Parmesan Tots

Ingredients

  • 2 medium zucchini
  • 1 cup panko breadcrumbs
  • 1/2 cup parmesan cheese
  • 1 egg
  • 1/2 tsp garlic

Instructions

  • Preheat oven to 400 F.
  • Grate the zucchini. I used a food processor to do this. You can either leave the skin on, or peel it before.
  • Use a paper towel to squeeze the liquid out of the zucchini. Do this several times.
  • To a large bowl, add all the ingredients. Stir together.
  • Form the mixture into tots.
  • Put the tots on a parchment lined baking sheet. Cook for 15-20 minutes or until the tots start to brown.
