Microwave Carrot Mac n Cheese

This Microwave Carrot Mac n Cheese has since become a staple in our household. It’s a one-bowl wonder that’s ready in under 10 minutes, making it perfect for busy days. Adding carrots not only enhances the nutritional value but also adds a vibrant color that appeals to little eyes. Whether you’re dealing with a picky eater or simply looking for a healthier twist on a classic comfort food, this recipe is sure to please.

Unfortunately, my 3 year old does not like carrots at the moment. I love making microwave mac and cheese, and I knew I needed to try adding carrots to it! I’m so glad I did because it worked out great! You can’t even taste them! Of course, you can make the recipe without the carrots if that’s what you want.

What You Will Need

1/2 cup macaroni noodles

3/4 cup water

1/2 cup shredded cheddar cheese

1/4 cup milk (dairy or non-dairy)

1 tablespoon unsalted butter

1/4 cup carrot puree (I use a frozen bag and steam them)

Instructions

1. In a large microwave-safe bowl, combine macaroni noodles and water.

2. Microwave on high for 4-5 minutes, or until noodles are al dente. Drain any excess water.

3. While the noodles cook, steam a bag of frozen carrots in the microwave according to package instructions.

4. Once steamed, blend the carrots with a splash of milk until smooth to create the carrot puree.

5. Add the shredded cheese, milk, butter, and carrot puree to the cooked noodles.

6. Stir to combine, then microwave for an additional 1.5 minutes, or until the cheese is melted and the mixture is creamy.

7. Stir well and let cool slightly before serving.

    Substitutions

    1. Macaroni noodles-or any small noodles.
    2. Cheddar cheese- you can use non-dairy cheese.
    3. Milk- use any non dairy milk.

    Storing Extra Microwave Carrot Mac n Cheese

    Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave, adding a splash of milk to restore creaminess if needed.

    Microwave Carrot Mac n Cheese

    Cook: 7 minutes
    Servings: 1

    Ingredients 

    • 1/2 cup macaroni noodles
    • 3/4 cup water
    • 1/2 cup shredded cheddar cheese
    • 1/4 cup milk
    • 1 tbsp unsalted butter
    • 1/4 cup carrot puree

    Instructions 

    • To a large microwavable bowl, add macaroni noodles and water.
    • Microwave for 4-5 minutes (until al dente). Drain any extra water.
    • Meanwhile, puree the carrots. Steam a frozen bag of carrots in the microwave. Puree the steamed carrots in a blender with a little bit of milk.
    • Once noodles are cooked, add cheese, milk, unsalted butter, and carrot puree to the bowl. Microwave for another 1 and a half minutes.
    • Enjoy!
