Carrot Chicken Nuggets

These are the EASIEST chicken nuggets to make in the world! It is pretty much the same recipe as my 3 ingredient chicken nuggets, but with added carrot! If your toddler is still learning to like carrots, or you just want to get more veggies into your them, this recipe is for you!

This recipe takes about 5 minutes to prepare, and 15 minutes to cook in the oven. It is super easy, and healthier than the chicken nuggets you buy at the store. Don’t get me wrong, I use those too. But sometimes I just want to get more veggies into my kids so I make these! You can’t go wrong either way.

To make this recipe super easy, I like to buy a bottle of carrot baby food instead of making the puree myself. Of course, you could puree it, I just like to do this to make it a little easier on me. That is one of my biggest tips for adding veggies to recipes. Buy a bunch of baby food and you can add it into things without ever having to cook and puree veggies. And no one will ever know!

As always, make sure you are still feeding carrots and other veggies plain with their meals as well. We don’t always want to “hide” veggies, because then your child will never learn to like them. Adding veggies to food just helps while they are learning to like veggies plain, and it helps add extra nutrition to things even if they do like veggies! You can’t taste the carrot in these nuggets AT ALL, and they are super yummy!

What You Will Need

  1. Rotisserie or canned chicken- see below for replacements
  2. Egg- see below for replacements.
  3. Mozzarella cheese- can also use parmesan.
  4. Carrot puree- I love to use carrot baby food to make it easy!

Substitutions

  1. Rotisserie chicken- can use canned or ground chicken (but you will need to cook longer)
  2. Egg- can use 1 flax egg, or an egg replacement from the store.
  3. Mozzarella cheese- can also use parmesan.

Feel free to add any seasonings you want into the chicken nuggets to make them even yummier! I like to add garlic powder.

Storage

After making these, you can freeze them for up to 2 months. Store in an airtight container and microwave in 30 second increments until warmed up. Alternatively, you can freeze the nuggets before cooking them and then just cook when you remove from the freezer.

Carrot Chicken Nuggets

Prep: 5 minutes
Cook: 15 minutes

Ingredients 

  • 2 cups rotisserie chicken , can also use canned
  • 1/2 cup carrot puree
  • 1 egg
  • 3 tbsp mozzarella cheese

Instructions 

  • Preheat oven to 350 degrees F.
  • Blend all ingredients together in a food processor or blender.
  • Form mixture into nuggets.
  • Bake at 350 degrees F for 15-18 minutes, or air fry at 350 degrees F for 13-15 minutes.
