Avoca-dough Pasta

This is such a fun recipe and a great way to get avocado into your toddler if they like pasta! My husband and I enjoyed this avocadough pasta so much, and you can pair it with your favorite pasta sauce for a super easy dinner! I hope you enjoy it as much as I do!

Made with just two simple ingredients – avocado and flour – this homemade pasta is not only delicious but also packed with nutrients. Ingredients:

  • 1 medium avocado (about 1/2 cup mashed avocado)
  • 3/4 cup- 1 cup flour

Instructions:

  1. Start by preparing the avocado dough. In a mixing bowl, mash the avocado until it is completely smooth.
  2. Add about half of the flour to the mashed avocado and mix it together using your hands or a kitchen aid dough hook.
  3. Gradually add the remaining flour little by little until a smooth dough forms. The dough should not be overly sticky, so add more flour if needed.
  4. Once the dough is smooth and pliable, form it into a ball and cut it into 8 equal pieces.
  5. Roll each piece of dough into a log shape, about 1/2 inch in diameter.
  6. Bring a large pot of water to a boil on the stove.
  7. To shape the pasta, you can either roll each piece of dough into a ball and press a divot into the center with your thumb, or you can use scissors to chop small pieces of dough straight into the boiling water.
  1. Add the avocado dough to the boiling water and cook for 4 minutes. The texture of the pasta will be almost like gnocchi.
  2. Once cooked, drain the pasta and toss it with your favorite pasta sauce.

For a simple sauce:

  1. In a saucepan over medium heat, melt some butter and minced garlic together until fragrant.
  2. Add the cooked avocado pasta to the saucepan and toss to coat the pasta in the buttery garlic sauce.
  3. Serve the Avocadough Pasta topped with grated Parmesan cheese for extra flavor.
