Avoca-dough Pasta

This is such a fun recipe and a great way to get avocado into your toddler if they like pasta! My husband and I enjoyed this avocadough pasta so much, and you can pair it with your favorite pasta sauce for a super easy dinner! I hope you enjoy it as much as I do!

Made with just two simple ingredients – avocado and flour – this homemade pasta is not only delicious but also packed with nutrients. Ingredients:
- 1 medium avocado (about 1/2 cup mashed avocado)
- 3/4 cup- 1 cup flour
Instructions:
- Start by preparing the avocado dough. In a mixing bowl, mash the avocado until it is completely smooth.
- Add about half of the flour to the mashed avocado and mix it together using your hands or a kitchen aid dough hook.
- Gradually add the remaining flour little by little until a smooth dough forms. The dough should not be overly sticky, so add more flour if needed.
- Once the dough is smooth and pliable, form it into a ball and cut it into 8 equal pieces.
- Roll each piece of dough into a log shape, about 1/2 inch in diameter.
- Bring a large pot of water to a boil on the stove.
- To shape the pasta, you can either roll each piece of dough into a ball and press a divot into the center with your thumb, or you can use scissors to chop small pieces of dough straight into the boiling water.
- Add the avocado dough to the boiling water and cook for 4 minutes. The texture of the pasta will be almost like gnocchi.
- Once cooked, drain the pasta and toss it with your favorite pasta sauce.
For a simple sauce:
- In a saucepan over medium heat, melt some butter and minced garlic together until fragrant.
- Add the cooked avocado pasta to the saucepan and toss to coat the pasta in the buttery garlic sauce.
