Ingredients You Need

  1. Crescent rolls- can find these at any grocery store
  2. Mozzarella cheese
  3. Spinach- love making spinach pesto vs basil pesto
  4. Parmesan
  5. Lemon juice
  6. Olive oil
  7. Minced garlic

  1. Combine all the ingredients in a food processor and blend until smooth. (besides the crescent roll and mozzarella cheese)
  2. Lay out the crescent roll triangles and spread pesto.
  3. Add mozzarella to each triangle.
  4. Roll up each one.
  5. Place on a baking sheet and bake until lightly browned.

Storage

After cooling completely, you can store pesto roll-ups in an air-tight container in the refrigerator for 3 days. You can freeze in a zip lock bag for up to two months.

The spinach pesto can last in the fridge for 5 days in the fridge and up to 6 months in the freezer.

Spinach Pesto Mozzarella Roll-Ups

Ingredients 

  • 1 can crescent rolls
  • Mozzarella cheese

Spinach Pesto

  • 3 cups spinach
  • 1/2 cup parmesan
  • 1 tbsp lemon juice
  • 1/2 cup olive oil
  • 1 tsp garlic

Instructions 

  • Preheat oven to 350 F.
  • To make the spinach pesto, combine all ingredients in a food processor and blend until smooth. (besides the crescent roll and mozzarella cheese)
  • Lay out each crescent roll triangle, spread pesto and mozzarella on each, and roll it up.
  • Lay out on a baking sheet, and cook for 9-10 minutes.

  1. My 14 month old loves the spinach pesto! In addition to making it on the crescent rolls, I also toss pasta in the spinach pesto and he loves it! Huge plus that it’s also easy and quick to make.
