Raspberry Cream Cheese Roll Ups

As parents, finding delicious and nutritious snacks for our toddlers can be a never-ending quest. Today, I have a delightful recipe that not only satisfies your little one’s taste buds but also adds a dash of creativity to snack time – Raspberry Cream Cheese Pinwheels. Packed with the goodness of cream cheese, sweet raspberry jam, and a hint of vanilla, these pinwheels are not only easy to make but are also a hit among the tiny tots.

Ingredients:

  • 1 can crescent dough
  • Cream cheese
  • Raspberry jam (homemade raspberry chia jam recipe included)
  • 1 1/2 cups frozen raspberries
  • 1 tbsp water
  • 1 tbsp chia seeds
  • 1/2 tsp vanilla extract
  • 1 tbsp honey (optional)

Instructions:

Raspberry Chia Jam:

  1. In a pot over medium-high heat, combine frozen raspberries, water, and honey.
  2. Bring the mixture to a boil, then reduce the heat to simmer.
  3. Add chia seeds and let the mixture thicken for about 15 minutes.
  4. Remove from heat and stir in vanilla extract.

Raspberry Cream Cheese Pinwheels:

  1. Preheat your oven to 350°F.
  2. Roll out the crescent dough and ensure there are no spaces between the seams.
  3. Spread a layer of cream cheese evenly over the dough.
  4. Spoon the homemade raspberry chia jam over the cream cheese layer.
  5. Starting from one side, carefully roll up the dough to form a log.
  6. Cut the log into 1-inch pieces.

Baking:

  1. Place the cut pinwheels on a parchment-lined baking sheet, ensuring some space between each piece.
  2. Bake in the preheated oven for 13-15 minutes or until the pinwheels are golden brown.
