  • 1 cup peanut butter
  • 1/3 cup melted coconut oil
  • 1/4 cup cocoa powder
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract

How to Make Easy Peanut Butter Chocolate Fudge

  1. Line an 8×8 inch dish or a loaf pan (for thicker fudge) with parchment paper, leaving some overhang for easy removal of the fudge later.
  2. In a mixing bowl, combine the peanut butter, melted coconut oil, cocoa powder, maple syrup, and vanilla extract. Stir until smooth and well combined.
  3. Pour the mixture into the prepared dish or pan, using a spatula to spread it out evenly.
  4. Place the fudge in the freezer for at least 1 hour, or until firm.
  5. Once the fudge is set, remove it from the freezer and use the parchment paper to lift it out of the dish or pan. Cut into squares or rectangles using a sharp knife.
  6. Serve the peanut butter chocolate fudge immediately, or store it in an airtight container in the freezer for up to one week. It will start to soften quickly after removing from the freezer.

Substitutions

Peanut Butter: Swap with almond butter, cashew butter, or sunflower seed butter for a nut-free version.

Coconut Oil: Replace with melted unsalted butter if coconut flavor is not preferred.

Maple Syrup: You can swap for honey or agave nectar.

Storing Extra Homemade Fudge

Store any leftover fudge for your toddlers in the fridge for up to 1 week in an airtight container. It will stay soft but firm and easy to slice. You can also freeze them for up to 3 months. Store in a freezer-safe container with parchment between layers to prevent sticking. Let them thaw for a few minutes at room temperature before serving for the best texture.

I was looking for a healthy-ish treat and was dubious this would work. But it was so good.

I topped it with shredded coconut and chocolate chips. Next time I’ll also add walnuts nuts for some crunch.
