They’re a fun, bite-sized version of the traditional dish, with the added goodness of broccoli.​

My 3 year old doesn’t like mac and cheese (crazy right?), but he will eat these! They are such a fun way to get in some broccoli too. Of course, you don’t have to add the broccoli, it’s up to you!

What You Will Need

1 cup chopped Broccoli

Mac n Cheese- could use boxed or homemade! My favorite to use is my microwave mac n cheese (make sure to double it), or even my cauliflower mac n cheese

    Instructions

    1. Preheat your oven to 350°F (175°C).

      2. Prepare your mac and cheese, whether boxed or homemade.

      3. Steam the chopped broccoli until tender, then mix it into the mac and cheese.

      4. Scoop the mixture into a greased mini muffin tin, filling each cup.

      5. If desired, sprinkle additional shredded cheese on top of each bite.

      6. Bake for about 15 minutes, until the tops are golden and the bites are set.

      7. Allow to cool for 5 minutes before removing from the tin.

      Storage

      Store any leftovers in an airtight container in the refrigerator for up to 5 days. To reheat, microwave for about 30 seconds. These bites can also be frozen for up to 3 months; simply thaw and reheat as needed.

      Broccoli Mac n Cheese Bites

      Prep: 10 minutes
      Cook: 15 minutes
      Servings: 3

      Ingredients 

      • 1 cup finely chopped broccoli
      • 1 box mac n cheese , or homemade! My favorite to use is my microwave mac n cheese (linked above), and you have to double it for this recipe

      Instructions 

      • Preheat oven to 350 degrees.
      • Make your favorite mac n cheese!
      • Steam broccoli and add to the mac n cheese.
      • Scoop mac n cheese into mini muffin tins. Add more cheese if desired.
      • Cook for about 15 minutes. Let set for about 5 minutes after and enjoy!
