Broccoli Mac n Cheese Bites

This is a great recipe to make ahead and save for easy lunches! It’s also great to use up leftover mac n cheese!

My 3 year old doesn’t like mac and cheese (crazy right?), but he will eat these! They are such a fun way to get in some broccoli too. Of course, you don’t have to add the broccoli, it’s up to you!

What You Will Need

  1. Broccoli
  2. Mac n Cheese- could use boxed or homemade! My favorite to use is my microwave mac n cheese (make sure to double it), or even my cauliflower mac n cheese

Storage

Store in a container in the fridge for up to 5 days. You can also freeze for up to 3 months! Just cook in the microwave for about 30 seconds to reheat!

Broccoli Mac n Cheese Bites

Prep: 10 minutes
Cook: 15 minutes
Servings: 4 people

Ingredients 

  • 1 cup finely chopped broccoli
  • 1 box mac n cheese , or homemade! My favorite to use is my microwave mac n cheese (linked above), and you have to double it for this recipe

Instructions 

  • Preheat oven to 350 degrees.
  • Make your favorite mac n cheese!
  • Steam broccoli and add to the mac n cheese.
  • Scoop mac n cheese into mini muffin tins. Add more cheese if desired.
  • Cook for about 15 minutes. Let set for about 5 minutes after and enjoy!
