You may or may not have seen this concept, slicing apples and dipping it in pancake batter. But did you know you can just bake them in the oven at once instead of having to cook each individual apple pancake on the stove?? Amazing, right?? This saves so much time!

Why Apple Pancakes Are Great for Toddlers:

  1. Nutrient-Rich Ingredients: Apple Pancakes are a powerhouse of nutrients. Apples provide dietary fiber and essential vitamins, while bananas add natural sweetness and potassium. The milk and flour offer additional nourishment that growing toddlers need.
  2. Texture Variety: These pancakes introduce your child to different textures. The soft and slightly crispy outer layer, along with the tender apple slices inside, encourages sensory exploration.
  3. Easy to Hold: The apple slices make the pancakes easy to handle for tiny hands. This helps promote self-feeding and fine motor skill development.
  4. No Added Sugar: This recipe contains no added sugar, making it a healthier alternative to many store-bought toddler snacks and pancakes.

Ingredients:

  • 2 apples
  • 1 banana
  • 1 cup milk
  • 1 cup flour

Instructions:

  1. Prepare the Apples:
    • Start by washing and peeling the apples.
    • Slice them lengthwise and remove any core by cutting a small circle in the center of each slice.

2. Mix the Batter:

  • In a bowl, combine the milk, flour, and mashed banana. Mix until you have a smooth batter.

3. Dip and Coat:

  • Using a fork, dip each apple slice into the pancake batter, ensuring it’s coated on all sides.

4. Bake:

  • Place the coated apple slices on a parchment-lined baking sheet.

5. Baking Time:

  • Bake at 350°F for 16-18 minutes, or until the pancakes are golden brown.

6. Enjoy:

  • Allow the pancakes to cool slightly before serving them to your little one. They can be enjoyed plain or with a dollop of yogurt or a drizzle of honey for added flavor.

Storage Tips:

  • To store any leftover Apple Pancakes, place them in an airtight container in the refrigerator. They should last for up to 2-3 days.
  • You can also freeze the pancakes for longer storage. Just ensure they are completely cooled, place them in a single layer on a baking sheet, and freeze. Once frozen, transfer them to a freezer-safe bag or container. They can be stored in the freezer for up to 2-3 months.
