What You Will Need
- Carrots
- Cream cheese
- Garlic powder
- Small shell pasta

Substitutions
- Cream cheese- you can use mascarpone cheese instead.
Instructions:
Step 1: Steam and Blend Start by steaming half a cup of carrots. You can use a microwave to speed up the process. Once they’re tender, transfer them to a blender or food processor. Add in 2 ounces of cream cheese and a dash of garlic powder (about 1/8 teaspoon). Add in some pasta water. Blend until the mixture is smooth and creamy.
Step 2: Cook the Pasta In a separate pot, cook 1 cup of small shell noodles according to the package instructions. Make sure to cook them to your preferred level of tenderness. Drain the noodles and set them aside.
Step 3: Combine and Enjoy Pour the creamy carrot mixture over the cooked pasta and gently toss to coat the noodles. Storage
You can store this in the fridge for about 3 days, and the freezer for up to 3 months! Tip: Freeze in a muffin tin, and then transfer the cups to a ziplock bag. Then you will have personal sized portions already made! Just reheat in the microwave.
Note
You will need some sort of blender for this recipe! Either use a food processor, blender, or personal sized blender. Any of those will work! I have linked the food processor that I use below.

Creamy Carrot Pasta
Ingredients
- 1 cup small shell noodles, or any other noodle
- 1/2 cup steamed carrots
- 2 ounces cream cheese
- splash of pasta water
- 1/8 tsp garlic powder
Instructions
- Cook pasta according to package.
- Steam carrots. I use microwave to steam carrots.
- In a food processor or blender, blend together steamed carrots, cream cheese, garlic powder, and pasta water.
- Combine cooked pasta, and creamy carrot sauce. Enjoy!
