Veggie Fruit Snacks
These healthy veggie fruit snacks are a fun, kid-friendly treat made with real produce—perfect for a simple, wholesome snack on the go!

- 1 cup strawberries chopped
- 1/4 cup carrots chopped
- 2 tbsp honey (taste and add more as needed)
- 1/4 cup water (can use apple juice instead for a sweeter taste)
- 3 tbsp gelatin unflavored
Add strawberries, carrot, honey, and water to a blender. Blend for about 5 minutes until super smooth.
Add fruit mixture to a pot on the stove. Add the gelatin and mix.
Cook over medium heat. Do not let it boil. Whisk constantly until the mixture is no longer grainy. This takes about 3 minutes.
Using a dropper, drop mixture into molds. Make sure to pop any bubbles that come up. Put in the fridge for 1-2 hours.
Pop the fruit snacks out of the molds and serve. Store in a bag in the fridge for up to a week, or in the freezer for longer!
Taste the honey and add more if you need it sweeter.
You can use apple juice instead of water if you want a sweeter taste!

If you don't have a mold, you could also spread onto a pan and then cut out shapes yourself after refrigerating.
