Veggie Fruit Roll Ups

Ingredients

  • 1 1/2 cups strawberries
  • 1 1/2 cups raspberries
  • 1/2 cup carrots (steamed)
  • 1 tbsp lemon juice
  • 1 tbsp maple syrup

Instructions

  • Set oven to 170 degrees F (or as low as your oven will go)
  • Steam carrots.
  • Blend all ingredients in a blender or food processor until completely smooth.
  • Pour fruit mixture into a saucepan and bring to a boil. Boil for 10 minutes. Doing this cuts the baking time in half!!
  • Pour fruit mixture onto a parchment paper lined baking sheet. Smooth it out, making sure it is about 1/8 of an inch thick everywhere. It will get thinner as it dehydrates, so don't make it too thin. If you can see the parchment paper through it, it's too thin.
  • Place in the oven. Bake for 4 hours, or until it is no longer sticky to the touch.
  • Once it is done, you can cut into strips!
