Set oven to 170 degrees F (or as low as your oven will go)
Steam carrots.
Blend all ingredients in a blender or food processor until completely smooth.
Pour fruit mixture into a saucepan and bring to a boil. Boil for 10 minutes. Doing this cuts the baking time in half!!
Pour fruit mixture onto a parchment paper lined baking sheet. Smooth it out, making sure it is about 1/8 of an inch thick everywhere. It will get thinner as it dehydrates, so don't make it too thin. If you can see the parchment paper through it, it's too thin.
Place in the oven. Bake for 4 hours, or until it is no longer sticky to the touch.
Once it is done, you can cut into strips!
