Veggie Alphabet Soup

Ingredients

  • 7 oz alphabet pasta
  • 4 roma tomatoes
  • 1 white onion
  • 1 bell pepper
  • 5 garlic cloves
  • olive oil
  • 1/4 cup heavy cream
  • 1/2 cup vegetable broth
  • salt to taste

Instructions

  • Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper.
  • Add the tomatoes, onion, bell pepper, and garlic cloves to the baking sheet.
  • Drizzle with olive oil and sprinkle with salt.
  • Bake for about 25 minutes, or until the vegetables are soft and lightly roasted.
  • While the vegetables cook, prepare the alphabet pasta according to the package directions. Drain and set aside.
  • When the vegetables are done, add them to a blender with the heavy cream and vegetable broth. Blend until smooth and creamy.
  • Pour the blended soup base into a bowl or pot and stir in the cooked alphabet noodles. Add as many noodles as you like. For a more traditional soup, use fewer noodles. For little kids, using more noodles can make the soup easier to eat and less soupy.
