In a bowl, combine flour, baking powder, egg, milk, vanilla extract, and maple syrup (if using).
Stir until smooth, then gently fold in the chopped strawberries.
Preheat a mini waffle maker and lightly grease it if needed. You can also use a regular sized waffle maker if you prefer.
Pour about ¼ cup of batter into the waffle maker and cook for 3 minutes, or until golden brown.
Let cool slightly before serving to toddlers. Enjoy as is or top with extra fruit, yogurt, or a drizzle of maple syrup.
