Servings: 3
- 2 bananas mashed
- 2 tbsp peanut butter
- 1 1/2 cup rolled oats
- 1 cup strawberries chopped
Preheat your oven to 350°F (175°C).
In a large mixing bowl, mash the bananas until they are smooth and free of lumps. Add the rolled oats, nut butter, and strawberries. Mix until smooth.
Grease a muffin tin with a bit of oil or use silicone muffin cups to prevent sticking.
Spoon the mixture into the prepared muffin tin, filling each cup 3/4 of the way. Press down slightly to compact the mixture.
Bake in the preheated oven for 15 minutes, or until the oat cups are golden brown and firm to the touch.
Allow the Strawberry Oat Cups to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
Make sure the bananas are well-mashed for a smoother batter and even texture.
Press the mixture firmly into the muffin cups to help them hold their shape after baking.
These oat cups are flexible—enjoy them as a quick breakfast, snack, or healthy dessert option. Feel free to serve them with some fruit or yogurt.
