Spinach Tomato Bites

- 1 cup finely chopped spinach
- 1 diced tomato
- 1/2 cup shredded cheddar cheese
- 4 eggs
Preheat oven to 350 F.
Add chopped spinach, diced tomato, shredded cheese, and eggs (whisked) into a bowl.
Stir it all together.
Thoroughly grease a mini muffin pan. Scoop the mixture into a mini muffin pan, filling it almost to the top.
Cook for 12-15 minutes, or until the bites are slightly golden brown on top.
