Preheat the oven to 425°F and line a large baking sheet with parchment paper.
Add the ground beef to a skillet over medium heat. Cook until completely browned, breaking it into small pieces as it cooks. Drain excess grease if needed.
Stir the taco seasoning into the cooked ground beef until evenly combined.
If your corn tortillas tend to crack when folded, wrap them in a damp paper towel and microwave for about 30 seconds. This will soften them and make them easier to fold.
Arrange the corn tortillas in a single layer on the prepared baking sheet.
Lightly brush both sides of each tortilla with olive oil.
Add some of the seasoned ground beef and shredded cheese to one half of each tortilla.
Fold each tortilla in half over the filling. Sprinkle a little additional shredded cheese over the tops if desired.
Bake at 425°F for 12 to 15 minutes, or until the tortillas are golden and crispy and the cheese is melted.
Let the tacos cool slightly before serving. Dip them in sour cream, guacamole, salsa, queso, or whatever your family loves.
