Peanut Butter Oatmeal Bars

These no-bake Peanut Butter Oatmeal Bars are soft, chewy, and made with just three wholesome ingredients. Perfect for toddlers, they’re naturally sweetened and easy to customize with chocolate drizzle or fruit. Great for breakfast, snack time, or lunchboxes, they come together in minutes and store beautifully in the fridge or freezer.

Ingredients

  • 1 cup peanut butter
  • 1/2 cup honey
  • 2 cups rolled oats
  • optional chocolate for drizzling

Instructions

  • Line an 8x8 baking dish with parchment paper or spray with cooking spray.
  • In a bowl, or in the 8x8 baking dish, mix together the peanut butter and honey until smooth.
  • Add the oatmeal to the peanut butter and honey. Stir until smooth.
  • Press the mixture into the 8x8 dish with a spatula or your hands until it is flat. If desired, melt chocolate in the microwave and drizzle over the peanut butter bars.
  • Place the bars in the freezer for 10-15 minutes or until the bars are set and firm. Cut into squares and enjoy!

Notes

Remember: This snack is only for ages 1+ because of the honey!
Storage: Store the bars in an airtight container in the refrigerator for up to one week.
Freezing: For longer storage, freeze the bars for up to 2 months. Thaw in the refrigerator or at room temperature before serving.
Serving Tip: For a firmer texture, keep the bars refrigerated until ready to eat.
