- 1 cup peanut butter
- 1/3 cup coconut oil melted, not solid
- 1/4 cup cocoa powder
- 1/4 cup maple syrup
- 1 tsp vanilla extract
Line a loaf pan (for thicker fudge), or an 8x8 baking dish (if you don't have a loaf pan) with parchment paper, leaving some overhang for easy removal of the fudge later.
In a mixing bowl, combine the peanut butter, melted coconut oil, cocoa powder, maple syrup, and vanilla extract. Stir until smooth and well combined.
Pour the mixture into the prepared dish or pan, using a spatula to spread it out evenly.
Place the fudge in the freezer for at least 1 hour, or until firm.
Once the fudge is set, remove it from the freezer and use the parchment paper to lift it out of the dish or pan. Cut into squares or rectangles using a sharp knife.
Serve immediately, and store in the freezer. The fudge will soften very quickly upon removing from the freezer.
Serving Size: Cut the fudge into small squares suitable for toddler portions.
