Ingredients

  • 1 cup peanut butter
  • 1/3 cup coconut oil melted, not solid
  • 1/4 cup cocoa powder
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract

Instructions

  • Line a loaf pan (for thicker fudge), or an 8x8 baking dish (if you don't have a loaf pan) with parchment paper, leaving some overhang for easy removal of the fudge later.
  • In a mixing bowl, combine the peanut butter, melted coconut oil, cocoa powder, maple syrup, and vanilla extract. Stir until smooth and well combined.
  • Pour the mixture into the prepared dish or pan, using a spatula to spread it out evenly.
  • Place the fudge in the freezer for at least 1 hour, or until firm.
  • Once the fudge is set, remove it from the freezer and use the parchment paper to lift it out of the dish or pan. Cut into squares or rectangles using a sharp knife.
  • Serve immediately, and store in the freezer. The fudge will soften very quickly upon removing from the freezer.

Notes

Serving Size: Cut the fudge into small squares suitable for toddler portions.
Texture Tip: For a firmer texture, ensure the fudge is fully set in the freezer before slicing.
Flavor Variations: Add chopped nuts, dried fruits, or a sprinkle of coconut or sea salt on top before freezing for added texture and flavor.
