Lasagna Soup

Ingredients

  • 1 lb ground beef
  • 1/2 onion diced
  • 1/2 cup celery diced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 3 tsp minced garlic
  • 1 tsp italian seasoning
  • salt to taste
  • 1 tbsp tomato paste
  • 1 24 oz jar marinara sauce
  • 6 cups chicken broth
  • 13 oz ricotta cheese
  • 9 lasagna noodles (broken into pieces)

Instructions

  • In a large pot, brown the ground beef over medium heat until fully cooked. Remove the beef and set it aside.
  • In the same pot, add a drizzle of olive oil. Sauté the diced onion, celery, minced garlic, garlic powder, onion powder, and Italian seasoning. Cook until the vegetables are soft and fragrant, about 5 minutes.
  • Stir in the tomato paste and cook for 1 minute. Add the marinara sauce, chicken broth, and broken lasagna noodles.
  • Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 10-15 minutes, stirring occasionally, until the lasagna noodles are tender.
  • Stir in the ricotta cheese and the cooked ground beef. Let everything simmer for another 5 minutes to combine flavors.
  • Ladle into bowls and garnish with a sprinkle of Parmesan or fresh basil if desired.
