In a large pot, brown the ground beef over medium heat until fully cooked. Remove the beef and set it aside.
In the same pot, add a drizzle of olive oil. Sauté the diced onion, celery, minced garlic, garlic powder, onion powder, and Italian seasoning. Cook until the vegetables are soft and fragrant, about 5 minutes.
Stir in the tomato paste and cook for 1 minute. Add the marinara sauce, chicken broth, and broken lasagna noodles.
Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 10-15 minutes, stirring occasionally, until the lasagna noodles are tender.
Stir in the ricotta cheese and the cooked ground beef. Let everything simmer for another 5 minutes to combine flavors.
Ladle into bowls and garnish with a sprinkle of Parmesan or fresh basil if desired.
