Frozen Peanut Butter Banana Fudge

- 2 bananas
- 1/4 cup peanut butter melted
- 2 tbsp coconut oil melted
Peel and mash the bananas in a medium bowl until very smooth.
In small microwave-safe bowls, melt both the peanut butter and coconut oil in short 15–20 second bursts, stirring in between, until smooth and pourable.
Add the melted peanut butter and coconut oil to the mashed bananas. Stir well until the mixture is fully combined and smooth.
Spoon the mixture into mini silicone cup molds. I use these molds! Place the molds on a tray and freeze for 1 hour, or until the fudge is firm.
Pop the fudge out of the molds and serve immediately
Make sure the bananas are very ripe for the sweetest flavor.
These fudge bites are soft-set, not hard like ice cubes, which makes them easy for toddlers to chew.
Add-ins like a sprinkle of cinnamon or a few mini chocolate chips on top before freezing are fun options for older kids.
