Ingredients

  • 6 slices of bread cubed
  • 3 eggs
  • 1 cup pepperoni chopped
  • 1 cup mozzarella
  • 1 tsp italian seasoning

Instructions

  • Chop the bread into small cubes and place in a large mixing bowl.
  • In a separate bowl, crack and whisk the eggs until well beaten.
  • Pour the eggs over the bread and add the chopped pepperoni, mozzarella cheese, and Italian seasoning.
  • Mix everything together until the bread is fully coated and ingredients are evenly distributed.
  • Spray muffin pan with cooking spray thoroughly or line a muffin tin with silicone liners. (Paper liners don’t work as well).
  • Scoop the mixture evenly into each tin and press down.
  • Bake at 350°F for 12 minutes, or until the egg is set and the tops are slightly golden.
  • Let cool slightly before serving to your toddler. You can even serve them with a little marinara on the side for dipping — always a win with little ones!

Notes

Serve with marinara for dipping or alongside raw veggie sticks to make it a complete mini meal.
These cups are perfect for lunchbox add-ons or after-nap treats—make a double batch and freeze extras.
