- 6 slices of bread cubed
- 3 eggs
- 1 cup pepperoni chopped
- 1 cup mozzarella
- 1 tsp italian seasoning
Chop the bread into small cubes and place in a large mixing bowl.
In a separate bowl, crack and whisk the eggs until well beaten.
Pour the eggs over the bread and add the chopped pepperoni, mozzarella cheese, and Italian seasoning.
Mix everything together until the bread is fully coated and ingredients are evenly distributed.
Spray muffin pan with cooking spray thoroughly or line a muffin tin with silicone liners. (Paper liners don’t work as well).
Scoop the mixture evenly into each tin and press down.
Bake at 350°F for 12 minutes, or until the egg is set and the tops are slightly golden.
Let cool slightly before serving to your toddler. You can even serve them with a little marinara on the side for dipping — always a win with little ones!
Serve with marinara for dipping or alongside raw veggie sticks to make it a complete mini meal.
These cups are perfect for lunchbox add-ons or after-nap treats—make a double batch and freeze extras.
