Banana Almond Cookies

Ingredients

  • 2 mashed bananas
  • 2.5 cups almond flour
  • 1/4 cup chocolate chips

Instructions

  • Preheat your oven to 375 degrees Fahrenheit and line a baking sheet with parchment paper.
  • In a large bowl, mix together the mashed bananas and almond flour until a smooth dough forms. The dough should not be sticky. If it feels too sticky, add a little more almond flour.
  • Roll the dough into small balls and place them on the prepared baking sheet. Gently flatten each ball with your hand or the bottom of a glass to create a cookie shape.
  • Bake for 13 to 15 minutes, or until the cookies are lightly golden.
  • Melt the chocolate chips in the microwave in 30-second intervals, stirring after each interval until smooth.
  • Spoon a small circle of melted chocolate onto a sheet of parchment paper for each cookie.
  • Press the bottom of each cooled cookie onto the melted chocolate.
  • Freeze for about 30 minutes, or until the chocolate is firm.
