Preheat oven to 350 F.
Wash the apples. Slice them lengthwise and remove any core by cutting a small circle in the center of each slice.
In a bowl, combine the milk, flour, and mashed banana. Mix until you have a smooth batter. (you can also just use any favorite pancake mix).
Using a fork, dip each apple slice into the pancake batter, ensuring it's coated on all sides. Place the coated apple slices on a parchment-lined baking sheet.
Bake at 350°F for 16-18 minutes, or until the pancakes are golden brown and crispy.
