Veggie Fruit Snacks

Ingredients

  • 1 cup chopped strawberries or blueberries, or mango
  • 1/4 cup chopped carrots or spinach
  • 2 tbsp honey (taste and add more as needed)
  • 1/4 cup water (can use apple juice instead for a sweeter taste)
  • 3 tbsp unflavored gelatin

Instructions

  • Add strawberries, carrot, honey, and water to a blender. Blend for about 5 minutes until super smooth.
  • Add fruit mixture to a pot on the stove. Add the gelatin and mix.
  • Cook over medium heat. Do not let it boil. Whisk constantly until the mixture is no longer grainy. This takes about 3 minutes.
  • Using a dropper, drop mixture into molds. Make sure to pop any bubbles that come up. Put in the fridge for 1-2 hours.
  • Pop the fruit snacks out of the molds and serve. Store in a bag in the fridge for up to a week!
  • If you don't have a mold, you could also spread onto a pan and then cut out shapes yourself after refrigerating.
