2-Ingredient Apricot Bars

- 4 cups dried apricot
- 2 cups unsweetened shredded coconut
Add ingredients to a food processor. If your food processor is small (like mine!), work in 2 batches to make sure everything blends well.
Process until the mixture is sticky and combined.
Line an 8x8 dish with parchment paper and press the mixture firmly into the pan.
Refrigerate for 1 hour or until firm.
Slice into bars or squares. Store chilled or at room temperature (details below).

If the mixture seems too dry or crumbly, your apricots might be too firm—try soaking them briefly in warm water and re-blending.
These bars contain no added sugar, making them a great naturally sweet snack for toddlers and older kids.
For added flavor, you can blend in a little vanilla extract or a dash of cinnamon—optional, but tasty!
