French Toast Casserole

This French Toast Casserole is soft, fluffy, and lightly sweet—perfect for feeding a hungry family or a toddler who loves breakfast bakes. It’s made with simple ingredients and baked in one dish for an easy, hands-off morning. Serve it warm with fruit or a drizzle of maple syrup for a comforting, kid-approved meal.

Ingredients

  • 6 eggs
  • 6 cups bread (cut into cubes) about 6 slices of bread
  • 1.5 cups milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 cup blueberries

Instructions

  • Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish.
  • Cut your bread into cubes. I use kitchen scissors for this. Place the cubed bread in the prepared baking dish.
  • In a separate bowl, whisk together the eggs first. Then add milk, cinnamon, and vanilla extract and whisk until well combined.
  • Pour the egg mixture over the bread in the baking dish, ensuring that all the bread is coated evenly.
  • Sprinkle the fresh blueberries over the top of the bread mixture.
  • Cover the baking dish with foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 15 minutes, or until the top is golden brown and the center is set.
  • Once done, allow the casserole to cool slightly before serving.

Notes

Day‑Before Option: For extra texture, prep the night before: cube the bread, pour custard, cover and chill 2–12 hours before baking.
Stale Bread Works Best: Slightly stale bread absorbs liquid better and holds its shape.
Freezing & Reheating: Store leftovers in the fridge for up to 3–5 days, or freeze for 2–3 months. To reheat, bake at 350°F (175°C) for 10–15 minutes or microwave individual portions until warmed.
Serving Suggestions: Serve warm with maple syrup, a dollop of yogurt or cream, or extra fresh fruit .
Double It: To feed a crowd, use a 9×13" pan and add 5–10 minutes of bake time.
