Ingredients

  • 1 egg
  • 1 tbsp diced tomato
  • 1 tbsp chopped spinach

Instructions

  • Preheat your mini waffle iron.
  • Crack the egg into a bowl and whisk it.
  • Chop up tomato and spinach.
  • Spray the waffle iron with cooking spray.
  • Pour the egg onto the waffle iron and add the chopped veggies.
  • Cook until done and serve warm!

Notes

Use soft, finely chopped veggies for best toddler-friendly texture.
This recipe is for one omelet — double or triple as needed.
Let the waffle cool for a minute or two before serving so it’s easy to hold.
If your mini waffle maker runs hot, check the omelet after 2 minutes to avoid overcooking.
