Easy Loaded Potato Soup

peeled diced potatoes

shredded cheddar cheese

green onions, sour cream, bacon bits, cheddar cheese
Instructions
Wash, peel, and dice the potatoes into small cubes.
Chop the onion.
Add the potato and the onion into a slow cooker. Add the chicken broth on top. You can add salt if desired.
Cook on high for 3-5 hours or until the potatoes are soft and ready to mash.
Once the potatoes and onion are done cooking, mash the potatoes with a potato masher until they have reached your desired consistency.
Add in the half and half, and cheddar cheese. Stir to mix, and then cover and let sit for about 20 minutes.
Ladle the soup into bowls and add whatever toppings you like! Some ideas are: bacon bits, green onions, cheddar cheese, and sour cream!
Notes
You can store this soup in the fridge for 3-5 days, and in the freezer for up to 3 months.
