Bring a pot of water to a boil on the stove.
In a mixing bowl, mash the avocado until it is completely smooth.
Add about half of the flour to the mashed avocado and mix it together using your hands or a kitchen aid dough hook.
Gradually add the remaining flour little by little until a smooth dough forms. The dough should not be overly sticky, so add more flour if needed.
Once the dough is smooth and pliable, form it into a ball and cut it into 8 equal pieces.
Roll each piece of dough into a log shape, about 1/2 inch in diameter.
To shape the pasta, you can either roll each piece of dough into a ball and press a divot into the center with your thumb, or you can use scissors to chop small pieces of dough straight into the boiling water.
Add the avocado dough to the boiling water and cook for 4 minutes, or until the pasta is tender and cooked through.Once cooked, drain the pasta and toss it with your favorite pasta sauce.
For a simple pasta sauce: on a pan over medium heat melt some butter and garlic until fragrant. Toss your avocadough pasta into the butter garlic sauce and top with parmesan.
