Avocadough Pasta

Ingredients

  • 1 medium avocado (1/2 cup avocado)
  • 3/4 - 1 cup all purpose flour

Instructions

  • Bring a pot of water to a boil on the stove.
  • In a mixing bowl, mash the avocado until it is completely smooth.
  • Add about half of the flour to the mashed avocado and mix it together using your hands or a kitchen aid dough hook.
  • Gradually add the remaining flour little by little until a smooth dough forms. The dough should not be overly sticky, so add more flour if needed.
  • Once the dough is smooth and pliable, form it into a ball and cut it into 8 equal pieces.
  • Roll each piece of dough into a log shape, about 1/2 inch in diameter.
  • To shape the pasta, you can either roll each piece of dough into a ball and press a divot into the center with your thumb, or you can use scissors to chop small pieces of dough straight into the boiling water.
  • Add the avocado dough to the boiling water and cook for 4 minutes, or until the pasta is tender and cooked through.Once cooked, drain the pasta and toss it with your favorite pasta sauce.
  • For a simple pasta sauce: on a pan over medium heat melt some butter and garlic until fragrant. Toss your avocadough pasta into the butter garlic sauce and top with parmesan.
